When creating new flavors we strive to achieve the perfect synergy between the science and art of flavor chemistry. Below is a list of some of the new extracts and flavors we have introduced in the last couple of months.
Lemon & Elder Flower Extract, Natural WONF (SC-Item 541BEV) – This flavor no doubt will be on everyone’s list in the next few months since it was chosen as the cake flavor for the wedding of Prince Harry and Megan Markle. The sweet, floral notes of the elder flower compliment the fresh, clean notes of the lemon and the combination is sublime. Developed for alcoholic and non-alcoholic beverages, we recommend a starting use level of 0.10% to 0.40% in most applications. In beer start at 0.10% and in cider and sweet wine 0.20%. This flavor can also be used in baking and ice cream. One teaspoon is sufficient for your typical cake or cookie recipe. When used by commercial bakers, we recommend a use level of 0.30% by weight and adjust to taste.
Hibiscus Extract, Natural WONF (SC-Item 542TTB) – Hibiscus extract is one of the flavors identified in our Flavor Trends 2018 – Alcoholic Beverages as one of the floral flavors consumers perceive to be cleaner, healthier and more natural than many other flavors. Floral infusions and extracts were historically used to flavor beer, cider and wine when other flavor ingredients were not available. This extract was developed for use in alcoholic beverages. In most applications we recommend a starting use level of 0.20% to 0.40% and adjust to taste. This flavor will impart a subtle pink hue to a purple color depending on the final use level. Hibiscus Extract, Natural WONF blends well with orange, lime, grapefruit and many tropical flavors. It is TTB approved for use in alcoholic beverages.
Arnold Palmer Type Extract, Natural (SC-Item 507 TTB – Named after the famous golfer, an Arnold Palmer is drink made by combining equal parts lemonade and iced tea. Our Arnold Palmer Type Flavor, Natural can be used to impart this flavor to a wide range of alcoholic beverages. We recommend a starting use level of 0.20% to 0.40% in most beverage applications. In beer, wine, and cider, start at 0.30% and adjust to taste. This flavor is TTB approved.
Vanilla Type Extract, Natural WONF (LC) (SC-Item 494ICR) – Our Vanilla Extract, Natural WONF (LC) is a one for one replacement for Pure Vanilla Extract in ice cream and frozen dessert specialties. This extract, which contains Pure Vanilla Extract, should be labeled as a natural flavor on your product’s ingredient statement. Our Vanilla Extract, Natural WONF (LC) has the same flavor profile as Madagascar Pure Vanilla Extract. Anyone looking for a cost effective replacement for Pure Vanilla Extract in ice cream that does not want to compromise flavor should evaluate this extract. You and your customers will not be able to tell the difference.
